Idly Manchurian
What You have: 4-5 idlis
What You need
Two cups of a mix of chopped onions, tomatoes, capsicum and red chillies
1 tsp aamchoor powder (or half a tsp of tamarind paste)
1 tsp turmeric powder
1 tsp garam masala
2 tblsps oil
1/2 tsp ajwain
½ tsp cumin seeds
Salt to taste
Method
Dice the idlis to bite size squares and keep aside. In a frying pan, heat the oil, add ajwain and cumin seeds, and immediately add the chopped veggies. Saute for two minutes, then add all the spice powder and salt. When the tomatoes begin to soften, add the idli pieces, mix well, and let it cool for about five minutes. Garnish with coriander chopped leaves and pack the lunch box.
Tip: Instead of Indian spices, you can add soya, chilli and sauce to the veggies, before adding the idli pieces and garnish with tabasco sauce and basil leaves, you can make this an oriental dish
